I'll Remember That.

Well, we are happy to announce that the City of Columbia has officially approved our plans for PJP West End…which is a relief because we’ve already paid half of the cost of the new equipment. We will take possession from The Kroenke Group on August 6th and then our friends at Beacon Street Construction can begin the task of making it look like the gorgeous PJP she will eventually become by mid-fall. We’ve ordered “I’m Going To Be A Big Sister” poster for PJP Nifong and a “Our Family Is Expanding” poster for PJP West End and we are going to run with that metaphor until we get sick of our selves.

Here’s what else is going on around here:

  1. All that said about the new location, we were notified that our ovens won’t be delivered until the first week of October because of blah, blah, blah delay reasons that are frustrating and beyond our control. (Who wants to take the over/under on how many times I will type that sentence in the next 90 days?)

  2. And what the heck is going on over on social media lately? Everyone is doing non-stop fun things - and doing it perfectly, it seems. I have mosquito bites, our backdoor at PJP doesn’t close properly, and no one showed up for interviews this week. We will just keep that off Instagram for the sake of us all.

  3. In the last two weeks, probably ten people have called us for boysenberry pie. Odd, right? I’ve never eaten a boysenberry and know relatively little about them, but they must be in season. At any rate, no commercial food supplier stocks them and we aren’t allowed to purchase from non-health department approved sources (like people who just have boysenberries at their house) so I guess I’ll never know. (Though, how does no restaurant in America purchase boysenberries?)

  4. When we had our opening permit inspection for PJP Nifong in 2019, the health department made us cut a pipe near our back handwashing sink (even though our construction manager strongly disagreed). And guess what? That pipe has been leaking and required repair this week. I’ll remember that.

  5. Tonight is the finale of Crime Scene Kitchen. I likely won’t watch, but I can’t even imagine what the final challenge will be. I’m guessing a five tier cake crafted to look like the cake that Princess Kate and Prince William had at their wedding, but complete with British flag fondant icing.
